Ingredients
- 4 boneless, skinless chicken breasts, cut and shredded into small sizes.
- 10 cups of homemade chicken broth or 5 cans of chicken broth
- 1 cup of celery, cut in small pieces
- 1 small, sweet onion, cut in small pieces
- 2 or 3 cloves of garlic, finely diced
- 2 tablespoons of olive oil
- 1 teaspoon of salt
- ½ teaspoon of pepper
- 2 tablespoons of red
- pepper (optional for an extra kick)
- 1 tablespoon of fresh cut parsley
- 3 small potatoes, chopped into small bite-size pieces
